Juicy and tender Angus beef filet is rubbed with a mix of spices, grilled to perfection and oven roasted. Topped with homemade compound butter and paired with crunchy grilled asparagus and crispy, fingerling potatoes tossed in parsley.

4 Chairman’s Reserve® Beef steaks, 8 oz each
½ teaspoon sugar
½ teaspoon kosher salt
½ teaspoon paprika
¼ teaspoon brown sugar
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon ground ginger
¼ teaspoon fresh cracked black pepper
⅛ teaspoon rosemary powder
2 teaspoons olive oil
Compound Butter
2 oz butter, room temperature
1 tablespoon fresh thyme leaves
¼ teaspoon smoked paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon kosher salt
Grilled Asparagus
12 oz asparagus
2 teaspoons olive oil
½ teaspoon kosher salt
¼ teaspoon fresh cracked black pepper
1 tablespoon lemon zest
Crispy Fingerling Potatoes
24 oz fingerling potatoes
1 tablespoon olive oil
1 teaspoon minced garlic
¾ teaspoon kosher salt
¼ teaspoon fresh cracked black pepper
1 tablespoon chopped parsley
Directions:

- For Compound Butter: In a small bowl, mix butter, thyme leaves, paprika, garlic powder, onion powder and salt until combined. Place butter on a sheet of parchment paper and form it into a tightly wrapped log. Place butter in freezer.
- For Filet: Preheat grill to high and oven to 350°F.
- In a small bowl, combine sugar, salt, paprika, brown sugar, garlic powder, onion powder, ginger, pepper and rosemary.
- Rub steaks with olive oil and seasonings.
- Grill steaks for 4 to 5 minutes on each side.
- Transfer steaks to a rack over an oven-safe pan lined with parchment paper.
- Roast steaks for 15 to 20 minutes or until an internal temperature of 125°F.
- Remove steaks from oven and let stand 10 minutes before serving.
- Slice butter into 4 pieces and place on top of hot steaks.
Grilled Asparagus
- Preheat the grill to high.
- Trim asparagus; remove fibrous end from each stalk.
- Place asparagus on a sheet pan. Sprinkle olive oil, salt and pepper over asparagus; roll to cover evenly.
- Grill asparagus for 3 to 4 minutes per side or until color deepens.
- Remove asparagus from the grill; garnish with lemon zest before serving.
Crispy Fingerling Potatoes
- Preheat the oven to 350°F.
- Cut large potatoes in half or quarters lengthwise. Small potatoes may be left whole.
- Line an oven-safe sheet pan with parchment paper. Place potatoes in a pan and toss with olive oil, garlic, salt and pepper.
- Roast potatoes for 1 hour.
- Remove potatoes from the oven; toss with parsley.
