The bold flavor of smoked pork chops pair perfectly with a honey-spiced glaze and fresh sides.

4 (10 oz) Chairman’s Reserve® Pork chops
2 tablespoons honey
1 teaspoon water
1 teaspoon kosher salt
¾ teaspoon fresh ground black pepper
1 ½ teaspoons fresh thyme leaves
2 pinches cayenne powder
roasted delicata with pumpkin seeds
20 oz delicata squash
1 tablespoon olive oil
1 teaspoon kosher salt
½ teaspoon fresh ground black pepper
1 teaspoon shallot, minced
1 teaspoon garlic, minced
¼ cup pumpkin seeds
roasted broccolini
12 oz Broccolini
3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon shallot, minced
1 ½ teaspoons kosher salt
½ teaspoon fresh ground black pepper
2 teaspoons lemon zest
Directions:

- Set the smoker to 250°F. Pat pork chops dry.
- In a mixing bowl, whisk together the honey, water, salt, pepper, thyme and cayenne.
- Toss the pork chops in mixture until all sides of each chop are evenly coated.
- Transfer the chops to the smoker and cook for 45 to 55 minutes or until the internal temperature has reached 130°F.
- Serve with roasted squash and Broccolini.
roasted delicata with pumpkin seeds
- Preheat the oven to 350°F.
- Split and deseed the squash, cut it into half-moons and place in a medium mixing bowl.
- Add the olive oil, salt, pepper, shallots and garlic. Toss well to season each wedge.
- Transfer the squash to the oven and roast for 20 minutes, turn the wedges over and roast for an additional 20 minutes.
- While squash roasts, toast the pumpkin seeds in a small sauté pan over high heat for approximately 3 to 5 minutes and remove immediately.
- At serving, sprinkle the toasted pumpkin seeds over the squash wedges and enjoy.
roasted broccolini
- Preheat the oven to 400°F.
- Wash and trim the fibrous ends from the Broccolini. If there are pieces that are quite larger than the others, halve them lengthwise.
- In a large mixing bowl, whisk together the olive oil, lemon juice/zest, shallot, salt and pepper.
- Toss the Broccolini in mixture and transfer it to a parchment lined oven tray.
- Roast the Broccolini for approximately 40 minutes or until it browns slightly and is al dente.
