Perfect a classic prime rib roast with this fool-proof recipe, including fresh Brussels sprouts and bold, smoky flavor.

19 lb Chairman’s Reserve® Beef boneless prime rib roast
Avocado oil
Chuck’s Flavor Train Prime Rib Seasoning
crispy Brussels sprouts
1 bag of trimmed Brussels sprouts
Olive oil
Pecorino grated cheese
Directions:

- Trim most of the fat and then coat the roast with avocado oil and Chuck’s Flavor Train Prime Rib Seasoning.
- Give meat a smoke bath at 275°F using white oak and hickory until the internal temp is 122°F. Then pull it off and loosely tent it with foil to rest for about 1 hour.
- Cut along the bone and serve with crispy Brussels sprouts.

- Get a bag of trimmed Brussels sprouts, coat them well in olive oil and sprinkle with pecorino grated cheese. Place on your smoker during your last 30 minutes of your cook.
